This week's haul has some of my family's most favorite recipes! If you've been following along on instagram, you know that my mom is in town so we have an extra adult to feed (in fact, she'll be doing the cooking this week!) It's been really fun to watch her follow the menu and cook the meals just like I hope you're all doing too!
Let's jump right in.
This week: $85 + items I already had on hand (pantry, fridge/freezer or garden).
Weekly Menu
Korean beef, white rice, edamame
Notes: I double the meat, but not the sauce! Be sure to use low-sodium soy sauce. I drain the meat before adding the sauce (otherwise it comes out too greasy!) I use ground ginger because it's easier to keep on hand. Top with scallions, sesame seeds, furikake seasoning or sriracha for an extra treat!
I'm serving this with basmati rice (cooked in rice cooker) and steamed edamame sprinkled with flaky sea salt (and chili onion crunch for the adults).
"Gagi's famous" chicken cutlets with rice pilaf and roasted broccoli
Grandma aka Gagi is cooking her "famous" breaded chicken cutlets! Serving with the boxed rice pilaf from Trader Joe's and broccoli drizzled with olive oil, salt and pepper and roasted at 450° for 20-30 minutes.
Pasta with butter roasted tomato sauce
Notes: I use 1 lb of pasta (using rigatoni this week), 2 cans of whole peeled tomatoes (preferably San Marzano), a whole can of anchovies in oil (and drizzle the oil on the sauce too!). I omit the red pepper flakes to keep this kid-friendly and chop the garlic instead of smashing.
Tuscan sausage pasta
Notes: I double this recipe and use a bag of baby spinach, a full jar of sundried tomatoes, and a whole package of Italian sausage.
Pizza and salad
This week we're grabbing a $9.99 Costco pizza (I highly recommend adding toppings at home! We love green bell pepper, red onion, garlic, jalapeño and sliced black olives with an extra sprinkle of shredded mozzarella). I'll serve with my copycat Olive Garden salad - chopped iceberg lettuce, sliced Roma tomatoes, whole pepperoncinis, homemade ciabatta croutons, whole black olives, thinly sliced red onion with bottled Olive Garden salad dressing.
Rotisserie chicken with loaded baked potatoes
Snagged a rotisserie chicken from Costco (or grab when you're getting the pizza!). I put into a baking dish then add any juice from bottom of container and a little chicken broth and reheat in a 350° oven for 30 minutes. Serving with loaded baked potatoes. For the potatoes, clean and poke all over with fork then drizzle with olive oil, salt and pepper. Bake on rack for 45-60 minutes at 350° (or microwave for 5 minutes first, then bake along with the chicken for 30 minutes or until fork tender). Top with plenty of shredded cheddar, chopped bacon (cooked), scallions and sour cream!
Leftovers buffet
Life hack: give something a fancy name and it will automatically sound more appealing!
On this night I put all of the leftovers on the island and let everyone pick and choose as they wish! There's no rules on leftovers buffet night so if the kids want only white rice and salad.. then that's what they eat! They love this!
