Christmas Cookies

Let's talk Christmas cookies! One of my favorite things to do for the holidays is bake Christmas cookies!

Some of my favorite cookies and treats from years past are:

Fudge topped with crushed candy canes

This year, I'm switching it up!

I've attached Diane's recipe here since she does not have a blog that I can link. I'm a sucker for anything that uses Christmas m&ms! These are so fun and indulgent.

M&M Christmas Cookie Bars

2 sticks of butter (1 cup) room temperature

1 cup of white sugar

1 cup of brown sugar

3 large eggs

1 1/2 teaspoons of pure vanilla

3 cups of all-purpose flour

3/4 teaspoon of baking soda

3/4 teaspoon of salt

1 1/2 cups of Christmas M&M's plus more for topping

1 cup of mini chocolate chips plus more for topping

1/2 cup of white chocolate chips

Preheat oven to 350 degrees.

Line a 9x13 baking dish with foil.

Spray foil generously with nonstick cooking spray.

In the bowl of a stand mixer, beat butter, granulated sugar, and brown sugar together until fluffy.

Add in eggs and vanilla extract and continue to beat.

Add flour, baking soda and salt and mix until combined.

Add M&M's and mini chocolate chips and give a final stir, reserving some M&M's, mini chocolate chips and white chocolate chips for topping cookie bars.

Transfer cookie dough to prepared baking dish.

Press additional M&M'S, mini chocolate chips and white chocolate chips into top of cookie dough.

Bake 35 minutes.

Let cool completely and cut.

Chewy Ginger Molasses Cookies (click to visit Gimme Some Oven's blog for recipe) I love how soft and chewy these are! They have the perfect amount of ginger and that molasses just finishes it off perfectly!

A classic favorite of mine are these Peanut Butter Blossoms (click for recipe by House of Nash Eats). There's tons of these recipes floating around but I loved that this one used butter instead of shortening and had no refrigeration time!

I've got a few more planned for next week too!

What are you baking this year? I'd love to hear in the comments! Happy baking, friends!
