Sheet pan pork tenderloin with green beans & potatoes
Notes: I have been making this recipe for probably 6-7 years and it's always a hit. Do NOT skip the hoisin - in fact, put some extra! It's so delicious. I love that it's a simple sheet pan dinner but packs the flavor!

Orange chicken with white rice & edamame:
Notes: I prepare the chicken according to package directions; however, I leave it in for 20-22 minutes and mix them all on the sheet pan so it doesn't get soggy. White rice I cook in the rice cooker and I steam the edamame in the microwave and sprinkle with flaky sea salt.

Fusilli a la vodka with salad & bread:
Notes: Of course feel free to make your own sauce, but in a pinch I love this one. I saute pancetta in oil then pour in the jarred sauce. Simmer until warmed through then toss with the cooked fusilli (cooked al dente in heavily salted water). I love to serve this with a toasty baguette (heated according to package directions) and salad - this week I picked the Lemony Arugula Basil Salad which is one of my favorites!

Pork carnitas street tacos:
Notes: Please don't come at me. I know this isn't authentic :) Heat the pork carnitas in the microwave then shred with 2 forks. I like to warm/toast the tortillas over the gas flame. Serve with your desired toppings - we did mild pico de gallo, sliced black olives and sour cream. I also added some yellow rice on the side.

Greek-style kebab pitas:
Notes: Heat the kebabs according to package directions. I'll give everyone a whole or half pita that they can stuff with whatever they choose (tabbouli, sliced cucumbers, tzatziki). You could definitely add more like hummus, but I wanted to keep the price down!

Notes: I use the above recipe for the burgers - it's perfection! I cook the fries in the oven according to package directions (except I add probably 10 more minutes because we like them crispy!)

Rigatoni with sausage, broccoli & sundried tomatoes:
This one I just threw together. I saw the Unexpected Cheddar Chicken sausage and HAD to try it. It totally lived up to the hype! I used some of the oil from the jar of sundried tomatoes to saute the sliced chicken sausage. Along with that, I added a sliced yellow onion and some cloves of chopped garlic. I cooked the rigatoni in heavily salted water until al dente (save some of the pasta water!) In the last 3-4 minutes, I added the broccoli into the boiling water with the pasta. Once the pasta was finished, I tossed it all together and loosened it up with some of the pasta water (and of course seasoned with salt and pepper at each step). I heated the baguette in the oven according to package directions.
